Because it is the healthiest oil on earth!  Unlike olive oil and many others, it's molecular structure doesn't change when heated.  Coconut oil is known as a 'good fat' and is full of omegas 3 and 6. Some coconut facts. In our 'diabetic friendly' cakes we use Agave Nectar as a sweetener.  It is a natural sweetener with no after-taste.
